I’ve never made this before, but I was looking for ways to waste an eggplant and mozzarella cheese. Success!

It was meant to be a first course… but yea, I always make too much.

Perfecting the gyoza

Aha! Now that’s looking more like it. That’s what you get when your friend brings you the correct dough from the special supermarket in the city. That weird tool didn’t work very well. xD. Tossed it aside as expected. These are all handmade. The gyoza the tool makes leaves too much dough standing upwards and they don’t sit as well in a pan (they’ll topple over).
